GUESTS:

Mary Steiger, Co-Owner / Chef
5845 N Oracle Rd, Tucson, AZ 85704
(520) 408-9000

Home

Mary attended the prestigious Scottsdale Culinary Institute, graduating valedictorian of her class. She worked as a pastry chef in a variety of high-end venues, managed several large retail bakeries, and owned and operated a bed and breakfast. With her business partner Susan, Mary began developing gluten-free recipes to make delicious, allergy-friendly food available to more Tucsonans. They began selling their products at local farmer’s markets and developed a loyal following. They successfully launched their restaurant, Gourmet Girls Gluten Free Bakery/Bistro, in 2011. Mary can frequently be found doing local fundraising events to give back to the community.

Rebecca Wicker, Co-Owner / Chef
4500 E Speedway Blvd #41, Tucson, AZ 85712
(520) 209-2872
rebecca@dedicatedgf.com

Rebecca believes that being gluten-free shouldn’t mean that your food tastes bad or is super expensive. She and her husband created Dedicated Gluten-Free Bakery & Coffee Shop to serve the community, and they are proud to share their delicious baked treats with their fellow GF’ers! Dedicated has a line of retail products available, and they supply restaurants and special events with a wide assortment of items. They continually strive for innovation, yet they’re still making their creations the way grandma made them.

Sigret Thompson, Co-Owner / Chef
722 N Stone Ave, Tucson, AZ 85705
(520) 250-9600

Home

Sigret has been passionate about cooking since she was a child. But it didn’t become more than a hobby until her early 20s, after she began working in the food and hospitality industry. She moved around the globe, spending time in New York, London, and Sydney, and expanded her reach as a personal trainer. In 2011, Thompson and her sister, Keanne, jumped at an opportunity to enter the catering business. Less than a year later, they opened a full restaurant offering an exclusively vegetarian menu.

The Panel Roundtable

  1. Food plays such a huge role in our sense of memory. To this day, the smell of onion slowly cooking in butter on the stove will instantly transport me to my Mom’s kitchen. I know when she starts a pan of that golden goodness that something delicious is coming our way. Are there particular food rituals or dishes from your childhood that inspired your love of cooking? Mary, I’ll start with you.
  2. As a business coach, I find myself chanting “You can sell to anyone, but who you market to should be specific. What your Ideal Client wants should be guiding your decisions.” I think some business owners shy away from being specific because they think they’re missing out on revenue. Yet each of you started a restaurant very much on your own terms and with a specific niche market in mind. I’m curious how each of you came to your respective concepts and whether you had any doubts about how they would be received. Sigret, I’ll start with you.
  3. Women still only make up around 21% of all head chefs. What’s frequently discussed is the difference between how women are perceived as domestic cooks versus professional chefs. Women chefs are managing a typically male-dominated staff under fast-paced and competitive circumstances. Sometimes people don’t always know how to interact with feminine energy in a leadership role. I know some women leaders feel like if they are calm and courteous, things don’t always get done. But if they become more aggressive, they either see results, experience resentment, or sometimes both. Have you ever struggled with feeling like you have to alter your personality to be a chef, or to be respected by your staff? Rebecca, I’ll start with you.

Cecily is the Creative Director and Founder of Single Focus Web, a webshop located in Tucson that specializes in well-crafted websites for nonprofits that speak to the special needs of each organization and its supporters.

  • Immediately prior to forming Single Focus Web, Cecily worked for an international web firm called Cornershop Creative. Cornershop has a wonderful reputation with larger national and international nonprofits for pairing innovative web design with usability focused on the special needs of nonprofits. As only the second employee to be brought in during Cornershop’s early days, Cecily was lucky enough to be able to both learn from and help shape the growth of Cornershop.
  • Single Focus Web was created with the intention to provide that same depth of service and customization to the smaller more localized nonprofits in and around Tucson, Cecily’s home of many years.
  • Prior to joining Cornershop Creative Cecily worked for the Community Food Bank of Southern Arizona developing their extensive online presence. When first joining the food bank they were raising slightly under $25k online in yearly donations. The year Cecily left they raised $1.4 million online.

About the Business

  • Cecily is joined in the business by her designer, Jessica Castillo who shares a background in nonprofit design and is absolutely magic.
  • We pride ourselves on websites that can be fully maintained in-house by nontechnical organizational staff and we provide full training packages with each website we build.
  • In order to help our nonprofits maximize donations and supporter interaction, we work with the full spectrum of CRM (Constituent Relationship Manager) choices including Bloomerang, eTapestry, Classy and many others. We love walking clients through the process of choosing a good CRM for them.

HOW ANIMAL AGRICULTURE IS DESTROYING THE AMAZON
LEARN WHY PETA IS URGING CONSUMERS TO REFRAIN FROM
LEATHER AND RECONSIDER THEIR DIET
Marissa Price, senior strategist for PETA

Marissa Price is a senior strategist for People for the Ethical Treatment of Animals (PETA). Her work focuses on equipping activists to lead animal rights protests, speak publicly about animal issues, and advocate for animal-friendly policies in colleges and universities across North America. She has been interviewed by the New York Post and The Washingtonian, among other news outlets.

 BACKGROUND:

Animal agriculture is the leading cause of deforestation in the Amazon and more than 80% of the rainforest has been used for meat production, either for grazing or for growing food for cattle, including those in the U.S. market. Animal agriculture requires massive amounts of land, feed, energy, and water and causes intelligent, sensitive beings to endure immense suffering. In nearly every step of meat, egg, and milk production, climate-changing gases are released into the atmosphere, disrupting weather, temperature, and the health of our ecosystem.

Did you know?

  • Eating meat is the second-biggest environmental hazard facing the planet, while a vegan diet has one of the smallest water, land and carbon footprints.
  • Recent advancements in textiles have made vegan leather options nearly indistinguishable from animal-derived leather, which makes the breeding, raising, killing, and skinning of animals for leather entirely unnecessary.
  • Speciesism is a human-supremacist worldview that fosters violence toward other animals, and it is the root of all the most widespread forms of animal abuse such as the fire in the Amazon.

The meat and leather industries are causing fires raging in the Amazon. A recent analysis of the food system’s impact on the environment stated that massive reductions in meat-eating are essential in order to avoid further catastrophic climate change. On Thursday, October 31, Marissa Price of PETA will discuss the effects that animal agriculture has on our environment. She will also discuss similarly, how the leather industry is contributing to worldwide climate change.

SUGGESTED INTERVIEW QUESTIONS:

  • Tell us about the effects of climate change on us and the environment.
  • How does animal agriculture impact climate?
  • Can you share more about the leather industry’s impact on climate?
  • What changes can people incorporate into their lives to help halt the effects of climate change?
  • Where can we go for more information?

For more information, please visit: PETA.org

I was born and raised in a tiny town of 500 people in NW Ohio. (Lindsey) The only girl with 3 brothers. I was lucky enough to go through 8 grades with the same 25 or so “Kids” and then in 9th grade, we joined the “city kids” at the big school in Fremont, Ohio. In the 1970s that meant going from about 25 kids to almost 600!

I got good grades, graduated high in my class and had tons of friends. My parents were married until my mother’s death in1995. She was from Chicago and my dad from a farm in eastern Ohio so life was good! Right after high school, I joined Up with People and during the US Bicentennial, I traveled all across this country and down into Mexico. For a kid who loved languages, loved people and loved to travel, it was a perfect fit.

After a second year of working and traveling through Europe, I started college here at the University of Arizona. It was here that I met my husband Gilbert. In 1980 we married and moved back to Ohio to be near my family. During those Ohio years, I had 3 sons, finished my degree at the University of Toledo, and lived in the same small town where I had grown up. My degree was in business and I started my career by working in Admissions for a technical college. For the next20 years, my jobs changed, but always somehow seemed to center on sales and/or management of some kind.

In 2000, we moved back to Tucson where my husband was born and raised. In 2005 I began my career in Real Estate and have been doing this full time since then. I am currently with Keller Williams Southern Arizona representing both buyers and sellers in residential Real Estate. I have been in the top 20% of my company for the past 10 years. I love what I do and have a passion specifically for helping those who might need someone to help with French! The person who loves to travel loves helping those coming to Tucson from not only colder climates here in the US, but also those who are moving from across the ocean. I have been on our agent leadership council for all but 3 of the past 10 years and specifically tend to work with our Culture Committee.

I am also active in my church, St Mark’s United Methodist as a praise team member in contemporary worship. And, most recently I have served as the head of our Staff Parish Relations committee as well as president of the Campus Christian Center. One of my goals this year is to work with the Inn Project, helping those immigrants coming to the US through Tucson on their way to their new homes here in the United States.
